750g new potatoes, sliced very thinly
250g onions, sliced thinly
250g Double Gloucester with chives, grated
250g streaky bacon, derinded and chopped
300ml milk
25g butter
salt and freshly ground black pepper to taste
TO GARNISH: parsley sprig
Recipe
Cover the potato slices with cold water and leave to soak for 15 minutes. Drain thoroughly and pat dry with kitchen paper.
Butter a 25x18cm baking dish and fill with alternate layers of potato, onion, cheese and bacon, beginning and ending with potato; season each layer with salt and pepper.
Bring the milk to the boil and pour over the potatoes. Dot with the butter and bake in a preheated oven, 190°C, 375°F, Gas Mark 5, for 1 hour. Leave to cool.
To freeze: Place in a freezer bag or wrap in foil, seal, label and freeze.
To thaw and serve: Unwrap, then cover and cook from frozen in a preheated oven, 220°C, 425°F, Gas Mark 7, for 20 minutes. Uncover, lower the heat to 190°C, 375°F, Gas Mark 5 and cook for 30-40 minutes, until the potatoes are tender. Garnish with parsley and serve with a crunchy mixed salad.
Serves 4-6.
