    1 cup of Veg oil
    3 beaten eggs
    2.5 cups of sugar
    2 cup of grated courgette
    2 teaspoons of vanilla extract
    3 cups of plain flour (but SF will be fine)
    0.5 teaspoon baking powder
    1teaspoon salt
    1 teaspoon cinnamon
    1 tea nutmeg
    1 cup raisins
    0.5 cup of walnuts

    either chuck in bread maker or

    Combine oil,eggs,sugar, courgette and vanilla. Stir in everything else.
    place into 2 8.5'x4'5 loaftins. Bake at 325 for 1.5 hours
