    6 Lambs Kidneys
    285ml (½ pint) Milk
    55g (2oz) Butter
    28g (1oz) Flour
    3 tbsp Cream
    Parsley to garnish
    Salt and Pepper to taste

    Recipe



    Skin, clean and slice the kidneys, soak in water for 30-45 minutes.
    Dry and fry gently in butter for 4-5 minutes.
    Remove from pan.
    Stir in the flour to the pan and cook gently for 1 minute, stirring constantly.
    Remove from heat and gradually add the milk.
    Season and bring to the boil stirring constantly
    Add the kidneys and cook for a further 3 minutes.
    Cool slightly, stir in the cream.
    Garnish with chopped parsley.
