    List of Ingredients




    For the Potato Cake

    4 oz Breadcrumbs

    1 Beaten Egg

    2 oz Flour

    1/2 lb Good Mashed Potato

    4 oz Black Pudding "from Bury" diced

    1 oz Chopped Chives

    Pinch of Salt & Pepper



    Poached Egg

    4 Free Range Eggs

    1 Teaspoon of Vinegar



    Baby Salad Leaves



    Mustard Dressing

    3 Teaspoons Grain Mustard

    Juice of 1/2 a lemon

    Olive Oil (Extra Virgin)

    Recipe



    1. Combine mashed potato, black pudding, and seasoning together.

    2. Mould into round barrel shapes, then coat in flour, egg and breadcrumbs and deep fry.

    3. Gently poach the free-range eggs.

    4. Combine mustard, lemon and olive oil, to form a dressing, season.

    5. Dress the plate with some baby leaves.

    6. Place black pudding onto leaves, top with the poached egg and dressing.
