Cumberland Sausage

Sausage and bean casserole
List of Ingredients
1 x yard of ‘Old County Original’ Cumberland Sausage
olive oil
1 x onion chopped
2 x potatoes cut into chunks
3 x carrots cut into chunks
300ml vegetable stock
2 x 400g baked beans
2 tblsp Worcesterhire sauce
6 tblsp fresh parsley chopped
salt and black pepper
Recipe
Heat oil in a large pan - add onions potatoes and carrots, cook for 5 minutes. Meanwhile cook sausage in oven as usual for 15 minutes. Pour stock into pan of vegetables bring to the boil reduce the heat and simmer for 10 minutes. Slice the sausage thickly, add to pan with baked beans and Worcestershire sauce, simmer for 5 minutes, stir in parsley and season to taste.
