    1 Kelsae onion;
    4 lambs’ kidneys (skinned, cored and quartered);
    2 handfuls chopped parsley;
    tsp double cream;
    good shot of brandy;
    salt and pepper

    Recipe



    Peel the onion, trim the root end flat, place in a pan of water and steam or par boil for 10 mins. Cut off the pointed end to make a lid. Hollow out the onion carefully. Chop the part you have removed. Melt the butter, season, fry the removed onion and quickly saute the kidneys. Add the parsley, cream and brandy. Adjust seasoning. Return the kidney mixture to the hollow onion and replace lid.

    Cook in the oven in a small casserole, Gas 5/190C/375F for 45 mins to one hour. Serve with crusty bread.
