    225g (8oz) Potatoes
    175g (6oz) Streaky Bacon
    50g (2oz) Self Raising Flour
    2 Medium Onions
    2 Eggs, beaten
    4 tbsp Oil
    Salt and Black Pepper

    Recipe



    Grate or finely chop the onions and add to the potatoes with the bacon, flour and seasoning.
    Finely chop or grate the onions.
    De-rind and finely chop the bacon.
    Grate the potatoes, place into a clean cloth and squeeze to remove as much liquid as possible.
    Place the potatoes, onion and bacon in a bowl, mixing thoroughly.
    Stir in the eggs.
    Heat the oil in a large frying pan.
    Add tablespoons of the mixture to the pan (a metal ring can be used if required to give shape) and fry for 5-8 minutes or until golden brown, turning once.
    Drain on kitchen paper.
    Serve hot as an accompaniment to breakfast or supper dishes.
