    ¾lb white fish (cod, haddock or coley)
    3 tablespoons milk
    3 tablespoons water
    2 teaspoons of cornflour
    seasoning
    1lb cooked and mashed potatoes
    chopped parsley to taste
    grated cheese
    2oz butter or margarine
    little chopped onion (optional)

    Recipe



    Wash the fish and put it in a pan, cover with the milk and water and simmer for ten minutes. Remove the fish and put it in an oven dish, cover with chopped parsley and season to taste. Make the sauce with butter, flour and liquid from the fish. Cook it for 3 or 4 minutes over a gentle heat. Pour it over the fish, cover with mashed potato and sprinkle generously with grated cheese and knobs of butter, and place under a hot grill for 5 minutes to brown. Cook for a further 30 minutes in a moderate oven at 300F (Reg. 4).
