List of Ingredients
10 skinless, boneless British chicken thighs
1 medium onion
1 medium red pepper
1 medium green pepper
1 medium yellow pepper
15ml/1tbsp sunflower oil
425g/14oz can chopped tomatoes
Recipe
Cut the chicken into bite-sized pieces. Ppel
and thinly slice the onion, halve and de-seed
the peppers and slice into small diamond
shapes.
Heat the oil in a shallow pan then quickly fry
the chicken and onion until golden. Add the
peppers, cook for 2-3 minutes, then stir in the
tomatoes, parsley and ground black pepper.
Cover tightly and simmer for about 15 minutes,
until the chicken and vegetables are tender.
Serve hot with wholemeal bread and salad.
Serves 4.
