This is a typical simple, robust Oxfordshire farm pudding.
List of Ingredients
Plain flour - 225g (8 oz)
Salt - pinch
Lard - 110g (4 oz)
Milk - 300 ml (10 fl oz)
Golden syrup - 4 tbsp
Recipe
Sieve the flour and salt into a large mixing bowl. Rub in the fat until it resembles fine breadcrumbs. Add enough milk to form a stiff dough.
Turn out on to a floured board and roll into a long rectangle. Spread with golden syrup and roll up.
Place in a greased deep dish and pour the remaining milk over the roll to about half-way up.
Bake at 200 °C / 400 °F / Gas 6 for 30-45 minutes or until golden.
Slice and serve with custard.
Serves 4-6.
