Illchester Beer Cheese on Toast

1 thick slice bread
50g/2oz Illchester beer cheese
1 tsp double cream
1 tsp grain mustardRecipe
1. Preheat the grill and a griddle pan.
2. Griddle the bread for 1-2 minutes on each side or until well charred.
3. Meanwhile, in a separate small pan gently melt the cheese and cream together.
4. Stir in the mustard.
5. Spread the toast with the cheese mixture and place on a baking tray.
6. Grill until golden. Serve.
Serves 1.
