Kidneys and Mushrooms

4 sheeps kidneys
1 onion, finely chopped
seasoned wholemeal flour
salt and black pepper
chopped parsley
6 oz mushrooms
1½ oz butter
¼ pint cider or stock
1 tbsp sherry or madeira Recipe
Blanch, skin and core the kidneys and cut them into slices about ¼ " thich. Cut the mushrooms in ¼ 2 slices also. Coat the kidney well with seasoned flour.
Melt the butter in a heavy pan and cook the onions until soft.Add the kidney and brown on both sides over a low heat.
Add thne mushrooms and gradually pour in the cider or stock, stirring well until the sauce is smooth and thick.
Cover and simmer gently for about 15 minutes. Add more salt and pepper to taste and just before serving add a spoonful of sherry or madeira.Sprinke with parsley.
Serve with triangles of bread fried golden in butter or some buttery toast.
