Lamb in the Pot with Beans

List of Ingredients
250g cannellini beans
500g lean, boneless lamb
4 large sticks of celery, chopped
1 large onion, sliced thinly
15ml spoon chopped fresh thyme or 5ml spoon dried thyme
2 x 5ml spoons chopped fresh rosemary or 5m1 spoon dried rosemary
600ml chicken stock
300ml tomato juice
½ x 5ml spoon Tabasco sauce
2 x 5ml spoons paprika
1 clove of garlic, crushedRecipe
Put the beans into a saucepan. Cover them with the water, bring them to the boil and cook them for 10 minutes.
Removefrom the heat and leave soak for 2 hours. Drain.
Preheat the oven to 180°C, 350°F, Gas Mark 4.
Cut the lamb into 2cm dice. Layer the beans, lamb, celery, onion and herbs in a deep casserole.
Mix the rest of the ingredients together and pour them over the lamb and beans.
Cover the casserole and cook it in the oven for 2 hours, or until the beans and lamb are really tender.
