    (Serves 2, 568 kcals and 27g protein per portion)

    List of Ingredients




    30ml/2 tbsp virgin olive oil
    1 medium onion, thinly sliced
    150g/5oz waxy potatoes
    1/2 green pepper, thinly sliced
    1/2 red pepper, thinly sliced
    1 clove of garlic, crushed
    3 large eggs, beaten and seasoned
    100g/4oz Lancashire tasty cheese

    Over a medium heat, heat half of the oil, add onion, potatoes and season. Fry gently, constantly turning for two minutes.
    • Add peppers and garlic, continue to fry for a further minute, reduce heat, cover and cook for eight/10 minutes until soft.
    • Heat the remaining oil in an omelette pan or small frying pan, pour in egg, add vegetables on top, allow to cook until egg is no longer clear.
    • Add cheese, grill until golden and brown, serve immediately

    This dish can be adapted to incorporate any ingredients that are to hand, swapping the peppers with tomatoes, for example.
