Little Hereford and Pear Tart

3 ripe Conference pears, cored, cut in half and tossed in lemon juice
3 ozs melted butter
2 tsps Balsamic vinegar
120 grms grated Little Hereford Cheese
2 tbs chopped chervil or parsley
Pastry:
180 grms plain flour
90 grms margarine
90 grms grated Little Hereford cheese
2-3 drops Tabasco sauce or a good sprinkle cayenne pepper
1 tsp mustard
water to mixRecipe
Pour melted butter and vinegar into a deep 8" china or glass flan dish. Arrange pears core side down in the butter, sprinkle the chervil over the pears and then the Little Hereford cheese. Make pastry, roll out into a circle just a little bigger than the dish, place over the cheese and press down. Bake in a hot oven until golden brown and the pears are tender. Cool slightly, place a large plate over the tart and invert fian dish over the plate. Delicious eaten just warm with a a salad of mixed sprouting beans and alfa alfa tossed in a little apple juice and hazelnut oil.
