500g minced beef
2 onions chopped
50g sultanas
2 cooking apples peeled cored and chopped
2 x 15ml spoons tomato puree
4 x 15ml spoons beef stock
salt and freshly ground black pepper
70g packet instant mashed potato
150ml milk
150ml water
50g Cheddar cheese, grated
parsley sprigs
Recipe
Mix together the beef, onions, sultanas and apples in a casserole. Blend the tomato puree with the stock and add to the beef mixture. Season with salt and pepper to taste.
Cover with foil and cook in a preheated moderate oven 180°C, 350°F, Gas Mark 4 for 30 minutes.
Make up the potato, using the milk and water, as directed on the packet. Spoon over the top of the pie. Sprinkle with cheese and return to the oven for about 15 minutes until the cheese is melted and browned.
Garnish with parsley and serve immediately.
