8 large pork sausages
500 grams fine sliced onions
500 grins fine sliced potatoes - Wilja variety are ideal
1 tsp chopped fresh sage
1/2 tsp fresh thyme leaves
1 tbs tomato sauce
2 cups dry still cider or perry: for example Dunkertons or Westons Perry, or Greensleeves Apple Juice from Jus

In a large casserole layer onions and potatoes with sausages in the middle. Combine all other ingredients and pour over the contents. Cover and bake in a slow oven for 2-3 hours. Delicious with lightly steamed ruby chard or savoy cabbage.
