500 grms sultanas
80 grms soft brown sugar
1 tsp mixed spice
400 ml hot still farmhouse cider
500 grms sultanas
Soak all the above ingredients on the left overnight or for at least 3 hours
Add 1 egg and gently fold in 350 grms self raising flour. Recipe
Pour the mixture into a lined and greased 2lb loaf tin. Bake in a moderate oven for aprox 3/4 to 1 hour or until a cake skewer comes out clean. Cool and allow to mature in an airtight tin for 2 days before eating.
