Old English Spicy Chicken Salad

List of Ingredients
225g/8oz young spinach leaves
3 sticks celery
½ cucumber
2 spring onions
45ml/3tbsp chopped parsley
350g/12oz boneless roast British chicken
Dressing:
2.5cm/1in piece fresh ginger root
45ml/3tbsp olive oil
15ml/1tbsp white wine vinegar
15ml/1tbsp clear honey
2.5ml/½tsp ground cinnamon
Recipe
Thoroughly wash and dry the spinach. Trim and
thinly slice the celery, cucumber and spring
onions. Toss together with the spinach and
parsley in a large serving bowl. Thinly slice the
chicken and arrange over the salad.
Peel and finely grate or chop the ginger root. In
a crew-topped jar, combine all the dressing
ingredients and shake well to mix. Adjust
seasoning to taste then pour over the salad.
Scatter a few almonds over the salad.
Serves 4.
