    Butter - 15g (½ oz)
    Onion - 1, chopped
    Chicken breast fillets - 4 x 110g (4 oz), skinned
    Cornflour - 15g (½ oz)
    Milk - 300 ml (½ pint)
    Chicken stock cube - 1
    Dried mixed herbs - 1 tsp
    Apple juice - 100 ml (4 fl oz)
    Seedless black grapes - 110g (4 oz), halved

    Recipe



    Melt the butter in a large frying pan, fry the onion and chicken for 3 minutes.

    Blend the cornflour with the milk, add to the chicken with the stock cube and herbs. Bring to the boil stirring. Add the apple juice, cover and simmer for 20 minutes.

    Stir occasionally, turn the chicken over once, halfway through cooking. Add the grapes just before serving.

    Serve with rice.

    Serves 4.
