Recipe Introduction
This recipe was known at Shropshire Fitchet Pie. "Fitchet" is a 17th century word for a weasel or polecat but we recommend bacon as a 21st century alternative.
List of Ingredients
8oz (225g) shortcrust pastry
1lb (450g) unsmoked minced bacon
4oz (110g) onions, chopped
8oz (225g) cooking apples, peeled and sliced
Quarter of a pint (150ml) strong chicken stock
a little sugar
mixed herbs
salt and pepper
Recipe
Place the minced bacon in the bottom of a deep pie dish. Put the apples and onions in layers over the top and season each layer with herbs, sugar, salt and pepper. Pour the strong chicken stock over the whole thing.
Bake in an over preheated to 325 C Gas Mark 4 for 30 minutes. Roll out a pastry lid and put it on top of the mixture. Bake for a further 20 minutes at 375 C Gas Mark 6
