8 back bacon rashers
2 onions
225g mushrooms
50g dripping
75g breadcrumbs
2 teaspoons chopped parsley
salt and pepper
1 egg beaten
Recipe
Cut the rind of the bacon. Skin onions, chop with the mushrooms and fry gently in dripping.
Mix in the breadcrumbs and parsley. Season well and bind with egg.
Spoon a little stuffing onto each rasher, roll up and secure with small skewers.
Grill on both sides until heated through and cooked.
Serve with potato crisps.
Serves 4.
