Scottish Style Peas

3 oz./90g butter
1 onion, minced
3 oz./90g (streaky) bacon, finely chopped
3 oz./90g air-cured ham, chopped
1 head romaine (cos) lettuce, chopped
2 lbs./1kg fresh green peas, shelled
2 carrots, diced
2 cups/500ml boiling water
2 T./30ml flour
Salt and freshly ground black pepperRecipe
Melt half the butter over medium heat and add the onion; allow
to just begin to brown. Add the bacon, ham and lettuce; saute,
stirring, 2 minutes. Add the peas and carrots; saute, stirring
occasionally, 6-7 minutes. Cover and simmer 15-20 minutes.
Meanwhile, rub the remaining butter together with the flour to
form a smooth paste. Add the roux to the pea mixture, making
sure it forms no lumps. Simmer gently another 5 minutes. Sea-
son to taste.
Serves 4-6.
