This evocative sounding recipe comes from North Northumberland, an area renown for harsh winters and scattered with the ruins of medieval fortresses built to repel Border raiders.
List of Ingredients
8oz plain flour
2oz butter
2oz lard
1oz currents
1 level teaspoon of baking powder
½ level teaspoon of salt
Milk and soured cream
Recipe
Sift the flour into a bowl and rub in the lard and butter. Stir in the currents, baking powder and salt, then mix to a soft dough, adding a little milk and soured cream. Roll out the mixture on a floured work-surface and fry gently on both sides on a greased griddle (a flat iron plate for cooking).
