Recipe Introduction
Skirlie is typical frugal Scots food, originally a complete meal in itself when there was little else to eat, now often served as a side dish or used as a stuffing for chicken, as in Howtowdie. The name suggests the noise which the suet makes as it sizzles in the pan, reminiscent of the bagpipe, with a little imagination.
List of Ingredients
Beef suet - 50g (2 oz), finely chopped
Onions - 2 medium, finely chopped
Medium oatmeal - 110g (4 oz)
Salt and freshly ground black pepper
Coriander seeds - ½ tsp, coarsely ground
Ground mace - ½ tsp
Freshly grated nutmeg - to taste
Recipe
Heat the suet in a frying pan, add the onions and brown well.
Add the oatmeal, seasoning (Skirlie, like Haggis, should be well seasoned, so don't stint on the black pepper) and spices.
Fry until the oatmeal is brown and crunchy. Serve as a side dish or use as a stuffing.
Serves 4-6.
