Smokey Bacon & Potato Breakfast

4-5 tablespoons cooked mashed potato
2 rashers smoked back bacon
1 free range egg
salt & freshly milled black pepper
2 teaspoon chopped fresh parsley
dash of Worcestershire sauce Recipe
Grill the bacon rashers until just turning golden. Dice the cooked bacon into ½” squares and mix well into the mashed potato together with half the chopped parsley. Check the seasoning of the mashed potato, add the Worcestershire sauce and add further salt and pepper to taste. Using an individual ovenproof dish mould the potato mixture into a 5” round with your hands and press down in the centre to make a well. Pop the dish into a medium hot oven for 10-15 minutes to heat through.
Remove from the oven and turn on the grill to medium. Crack the egg into the well in the centre (you may need to press the well down a little with the back of a spoon) and pop the dish under the grill. Cook until the egg white has set and the yolk is still runny. The top of the potato will be golden and crispy. Garnish with a sprinkle of the remaining parsley.
