4oz castor sugar
6oz plain flour
4oz butter
a few drops of almond or vanilla or lemon essencRecipe
Cream the butter and sugar together until light in colour and fluffy in texture. Gradually fold in the sieved flour and add the chosen flavouring. Bake in well-greased scallop shells. Before putting in the oven sprinkle with a small amount of sugar. Cook for 20-25 minutes at 350 degrees F. To serve remove from shells, cool and sprinkle with a little icing-sugar.
