    Fresh spinach - 450g (1 lb), or spinach beet
    Spring onions - 2 bunches
    Parsley - 2 good handfuls
    Butter - 50g (2 oz)
    Salt and pepper


    Wash the spinach or spinach beet. Trim and chop the spring onions and chop the parsley coarsely.

    Melt the butter in a thick pan (this is important as no water is used in the cooking except that clinging to the spinach).

    Shake the spinach, put it in the pan with the onions, parsley and a seasoning of salt and pepper.

    Stir it for a minute until it wilts down and cook gently in a covered pan for 15 minutes, stirring occasionally. Drain if necessary and serve with liver and bacon.

    Serves 4.
