    West Country Chicken & Potato Casserole

    • 350g (12oz) British new potatoes, scrubbed, halved
    • One tablespoon of olive oil
    • Four 100g chicken portions
    • One stick of celery, sliced
    • 150g (5oz) baby carrots
    • Three tablespoons of plain flour
    • 450ml (1pt) cider
    • One chicken stock cube
    • Two tablespoons of thyme, freshly chopped
    • Salt and black pepper
    • One bunch of spring onions, cut into 3cm (1¼") pieces
    • One apple, sliced

    Recipe



    1. Preheat the oven to 200°C/400°F/Gas Mark six.
    2. Heat the oil in a frying pan and fry the chicken for five minutes until browned. Transfer to a casserole dish with the new potatoes. Add the celery and carrots to the pan and fry for two to three minutes.
    3. Stir in the flour and cook for one minute. Gradually blend in the cider and add the stock cube. Bring to the boil, stirring. Add the thyme and seasoning and pour over the chicken. Cover and cook for one and a half hours.
    4. Add the spring onions and apple and cook for a further 15 minutes. Stir well before serving.
