4 lean pork chops
1 sprig thyme
2 Bramley apples (cored and diced)
1/2 pint strong dry cider
1 onion sliced
1 tablespoon apple brandy (optional)
Salt and black pepper
Butter for fryingRecipe
Fry chops in butter for about 3 mins each side (until browned). Remove
chops to a flame proof casserole dish. Fry onion and thyme in the same
saucepan as the pork. Add apples, cider and brandy. Poach for about 5
mins. Add this to the chops. Cook in oven 300ºF for about 40 mins.
Thicken the sauce if desired.
Serve with jacket potato, creamed swede and spring greens.
