    A sticky, moist cake which improves if kept for a few days in an airtight container. Molasses has a slightly stronger taste than black treacle. It is a natural unprocessed product very rich in iron, calcium and essential minerals, and is obtained from the supermarket or health food shops.

    List of Ingredients




    250g / 8oz / 2 cups plain / all purpose flour
    190g / 6oz / 3/4 cup sugar
    3 tbs treacle
    you can use 2tbs golden syrup and 1 black treacle or 2tbs maple syrup and 1 molasses
    2 tsp ginger
    1 tsp baking powder
    3 oz margarine

    Recipe



    Mix dry ingredients together add treacle and margarine (melted together). Mix carbonate of soda in 1 tablespoon milk. Mix all together and bake at 150C / 200F / gas mark 2 until "springy"
    Yorkshire Moggie Cake:

    Microwave Variation

    125g / 4oz margerine
    2 level tbs molasses or black treacle
    1 large egg, beaten
    125g / 4oz / 1 cup farmhouse self raising flour* or self raising flour
    1 level tsp baking powder
    2 level tsp ground ginger

    7 in/18cm round, plastic microwave dish, lined with baking parchment.
    Place the margerine, honey and molasses or black treacle in a medium sized bowl. Microwave uncovered on HIGH for 1 1/1 - 2 minutes, until melted. Cool slightly.

    Beat in the eggs and sift in the flour, baking powder and ginger. Beat until smooth. Pour into the prepared container and microwave on HIGH for 3 1/2 - 4 minutes. If your microwave does not have a rotating stand, stand the dish on a trivet and turn the dish once during cooking. Stand for 10 minutes.

    Carefully loosen the edges with a plastic knife with a plastic knife then invert on to a cooking rack that has been lined with greaseproof or absorbent paper. Once cold store in an airtight container.
    * Farmhouse Flour:

    Half white, half wholemeal flour. Also available in some supermarkets, delicatessens and health food shops.
