    For crust:
    1/2 cup plus 2 tablespoons packed brown sugar
    3/4 cup finely chopped pecans
    3/4 cup all-purpose flour
    6 tablespoons clarified butter (see note)
    For filling:
    3 (8-ounce) packages cream cheese, at room temperature
    3/4 cup granulated sugar
    1 tablespoon vanilla extract or 1/4 cup imitation vanilla extract
    3 eggs
    1 to 1 1/3 cups chocolate mini chips, chocolate ganache, chopped candy bars or
    fruit, optional

    To prepare crust: Preheat the oven to 350 degrees. Stir together brown sugar, pecans and flour; add butter and stir to moisten evenly. Press into a 10-inch-wide, 2-inch-deep springform pan. Bake until golden brown, about 8 minutes. Let cool 5 minutes. Place pan on a large square of heavy-duty foil. Carefully fold foil around sides of pan; set aside.

    To prepare filling: Reduce the oven temperature to 325 degrees.

    Beat together cream cheese, sugar and vanilla until smooth. Scrape down sides of bowl; beat in eggs, one at a time, until well incorporated. Stir in optional ingredients.

    Pour filling into crust. Place in a larger baking pan; add water to a depth of about 1/2 inch. Bake just until set, about 90 minutes. Remove from oven and water bath, run a thin knife between the cake and pan, but do not release pan sides. Let cool, then chill before removing pan sides and slicing.

    PER SERVING (based on 16 servings): 345 calories; 25g fat (65 percent calories from fat); 13g saturated fat; 108mg cholesterol; 6g protein; 24g carbohydrate; 18g sugar; 1g fiber; 145mg sodium; 52mg calcium; 124mg potassium.

    Note: To make 6 tablespoons clarified butter, melt 1/2 cup (1 stick) butter, then chill. When firm, gently scrape any foam off the butterfat layer and discard. Run a knife around the solid layer and lift; pour off the liquid and milk solids. Remelt the clarified butter.


    Yield: 12 to 16 servings.
