    The delightful golden cake
    4 eggs, separated, at room temperature
    1 teaspoon vanilla extract
    1 cup (2 sticks) butter, softened
    1 1/4 cups granulated sugar
    1 3/4 cups cake flour

    The delicious cream filling
    4 tablespoons cold water
    1 teaspoon unflavored gelatin
    1 cup heavy whipping cream
    2 tablespoons powdered sugar
    1 teaspoon vanilla extract
    1/2 teaspoon lemon juice
    1 restraining order

    Adjust oven rack to the upper third of the oven. Preheat oven to 350 degrees F.

    Make the Twin-key molds: Find something in the kitchen that's approximately the size and shape of the Twinkie you hope to emulate. (Small spice bottles or especially attractive store-bought Twinkies are just about perfect.) Now wrap the object with aluminum foil from end to end leaving one side open (so that it resembles a little canoe). Fold the excess under, smooth the edges and flatten the closed side enough to remain stable when filled with batter. Make twelve, grease well or spray with non-stick vegetable coating.

    Combine and whisk together the egg yolks and vanilla, then set aside. Beat the butter and sugar together until fluffy and white, set aside. Beat the egg whites into soft peaks. Slowly beat the egg yolk mixture into the butter mixture, and then fold in the beaten egg whites. Sift the flour into the egg mixture and fold together until flour is fully incorporated. Pour batter into molds, leaving an inch at the top. Bake in the preheated oven for about 25-35 minutes, until the cakes are golden brown and a toothpick inserted in the center comes out clean. Cool before removing from molds.

    Place a small saucepan over low heat. Add cold water and sprinkle the gelatin on top. Slowly heat until the gelatin melts. Combine cream and melted gelatin and beat until beginning to thicken. Add sugar, vanilla and lemon juice and continue beating until stiff. Transfer beaten cream to a piping bag fitted with a small tip.

    Use a skewer or drinking straw to create 2 or 3 attractively spaced holes in the bottom of each Twin-key, pump in the desired amount of delicious cream filling and devour without mercy.

    Clean up tip: Cook with your roommate's dishes; after dinner, just pack them up and evict them.

    Makes one dozen.
