    Fantasy Island Cake with Cherry Sauce

    1 3/4 cups who wheat pastry flour or King Arthur's white whole wheat flour
    1 tsp. baking powder
    1 tsp. baking soda
    3/4 cup honey
    1/4 cup chopped nuts
    1 cup crushed pineapple, slightly drained
    1 ripe banana, mashed
    Ener - G egg replacer equivalent to 2 eggs (1 tsp. powder to 2 tbsp. water)
    1 tsp. vanilla

    Cherry Sauce
    1 - 15 oz can cherries packed in water
    1 11.5 oz apple juice concentrate
    6 tbsp. arrowroot or 3 tbsp. cornstarch powder

    Pre-heat oven : 350 degrees F

    Cake
    Combine flour, baking powder, baking soda, and nuts in small bowl. In large bowl, combine honey, pineapple, banana, egg replacer and vanilla. Add dry ingredients slowly to wet, until thoroughly blended. Be careful not to over-stir, as this will toughen the texture of your cake. Bake in 9" X 9" cake pan, 30 to 35 minutes or until toothpick inserted into center comes out clean. Serve warm with Cherry Sauce.

    Cherry Sauce
    Place ingredients into saucepan and stir thoroughly, making sure arrowroot is completely dissolved. Bring topping to a gentle boil, stirring constantly until thick. Serve warm or at room temperature.

    Recipe Tip: This recipe also makes a nice light muffin.

    Serves 8
