Grand Central Cream Cheese Apple Cake

Makes one 10-inch Bundt cake, 20 servings

3 cups all-purpose flour
11/2 teaspoons baking powder
1 teaspoon salt
1 teaspoon ground cinnamon
1 cup butter, softened (2 sticks; see note)
12 ounces cream cheese, softened (11/2 8-ounce packages)
21/2 cups granulated sugar
4 eggs
1 teaspoon vanilla
3 cups peeled, diced tart apples (11/4 pounds)
Sifted powdered sugar
Recipe
Preheat the oven to 350 degrees. Grease and flour a 10-inch Bundt pan.
Sift together the flour, baking powder, salt and cinnamon; set aside.
In the large bowl of an electric mixer, beat the butter, cream cheese and sugar for 8 minutes on medium speed.
Beat in the eggs one at a time, scraping sides of bowl between additions; beat in vanilla. Reduce the mixer speed to low and gradually add the flour mixture. Stop mixing as soon as the flour is incorporated. Gently fold in the apples.
Pour the batter into the prepared pan. Bake for 1 to 11/4 hours or until a toothpick inserted in the center of the cake comes out clean. Cool 10 minutes and remove from the pan. Cool completely and top with sifted powdered sugar. Note: Use real butter or stick margarine. Do not substitute reduced-fat spreads; their higher water content often yields less-satisfactory results. --
