    HOLLYWOOD GRAPEFRUIT CAKE

    1 1/2 cups sifted cake flour

    3/4 cup sugar

    1 1/2 teaspoons baking powder

    1/2 teaspoon salt

    1/4 cup vegetable oil

    3 eggs, separated

    3 tablespoons grapefruit juice

    1/2 teaspoon grated lemon zest

    1/4 cup water

    1/4 teaspoon cream of tartar

    Grapefruit cream-cheese frosting (recipe follows)

    Heat oven to 350 degrees. Sift together flour, sugar, baking powder and salt into mixing bowl. Make a well in the center of the dry ingredients. Add oil, egg yolks, grapefruit juice, lemon zest and 1/4 cup water. Beat until smooth.

    In another bowl with clean beaters, whip the egg whites with the cream of tartar until stiff but not dry. With a rubber spatula, gently fold the whites into the cake batter just until blended. Do not stir the mixture. Scrape into an ungreased 10-inch springform cake pan.

    Bake for 25 to 30 minutes, or until the cake springs back in the center when touched lightly. Place the pan on a cake rack until cooled completely.

    Run spatula around edge of the pan and carefully remove the sides. With a serrated knife, cut cake horizontally into two layers. Slide a flat cookie sheet between the layers to lift the top one off. Spread the grapefruit-studded frosting on the bottom layer. Slide the top layer back on and frost the cake top and sides with the plain frosting. Cut into serving portions, and garnish each with a grapefruit section. Makes 12 servings.

    GRAPEFRUIT-CREAM CHEESE FROSTING

    2 (6-ounce) packages cream cheese, at room temperature

    2 teaspoons lemon juice

    1 teaspoon grated lemon zest

    3/4 cup confectioners' sugar

    6 to 8 drops yellow food coloring (optional)

    3 grapefruit, peeled, sectioned and drained, or 1 (1-pound) can or jar grapefruit sections, well-drained, with 2 tablespoons juice reserved from either

    Beat cream cheese until fluffy. Add lemon juice and zest. Gradually beat in sugar, food coloring and reserved 2 tablespoons of grapefruit juice until smooth.

    Divide the frosting evenly into two bowls. Roughly chop 2/3 of the grapefruit and add to one portion. Reserve remaining sections for garnish. Makes enough for a 12-serving cake.
