3/4 cup(s) Five Roses All Purpose Flour
2 tsp. baking powder
1/4 tsp. salt
3 eggs
3/4 cup(s) sugar
2 tsp. grated lemon rind
1 tbsp. lemon juice
1 tbsp. water
jam or jelly
icing sugar
Recipe
Preheat oven to 190ºC (375ºF). Combine flour, baking powder and salt together; set aside. Beat eggs until thick, about 5 minutes. Gradually beat in sugar, add rind, juice and water. Blend in dry ingredients and beat by hand or at low speed with electric mixer. Spread batter in a greased 25 cm x 40 cm (10" x 15") jelly roll pan lined with greased paper. Bake 12 to 15 minutes or until lightly browned. Top should spring back when lightly pressed with fingertips. Remove from oven and turn out onto a cloth sprinkled with icing sugar. Remove paper quickly and trim off side crust. Roll immediately lengthwise with cloth. Cool. Unwrap and spread thinly with jam or jelly. Roll again and cut in slices.
