    12 oz prepared rhubarb cut into chunks
    8oz sugar
    grated zest & juice of 1 orange
    5oz flora
    2 eggs beaten
    1/2 tsp baking powder
    3 oz SR flour
    4 oz ground almonds

    topping -
    1 oz butter
    2oz slivered almonds
    1 oz demerera sugar

    Recipe



    . Mix rhubarb with 2 oz of the sugar and orange zest - and leave for 1 hour.
    2.Cream marg and remaining sugar until fluffy.
    3. Add eggs and flour/baking powder/ground almonds. Beat gently until smooth.
    4. Stir in orange juice.
    5. Spoon mix into lined and greased 9 inch round tin.
    6. Drain rhubarb over sieve and spoon chunks onto cake mixture.
    7. Bake for 25 mins at 190c (fan oven 170c).
    8. After 20 mins prepare topping - put ingredients over gentle heat , melt and mix.
    9. When 25 mins are up take cake out of oven, and sprinkle over topping mix.
    10. Put back in oven at 180 (fan 160c) for 15 - 20 mins until cooked through.

    Serve warm with whipped cream!!
