    Sweetheart Fudge Pie

    List of Ingredients




    # 1/4 cup butter or margarine
    # 3/4 cup brown sugar, packed
    # 3 eggs
    # One 12-ounce bag (2 cups) semi-sweet chocolate chips
    # 2 teaspoons instant espresso coffee
    # 1 teaspoon almond extract
    # 1/4 cup flour
    # 1 cup drained chopped maraschino cherries (see note)
    # One 8-inch pie shell (can use 9-inch if purchasing pre-formed shell)
    # 1 cup whipping cream
    # 2 tablespoons drained chopped cherries

    Cream butter with brown sugar; add eggs -- one at a time -- beating well after each addition. Melt chocolate over hot -- not boiling -- water in a double-boiler. Let cool.

    Combine chocolate, coffee, almond extract and creamed mixture. Stir in flour and drained chopped cherries.

    Pour into pie shell. Bake At 375 degrees for 25 minutes. Cool completely.

    Whip cream until stiff; fold in 2 tablespoons drained chopped cherries. Spread on top of pie. Decorate with grated chocolate or chocolate curls, if desired.

    NOTE: Walnuts can be substituted for the cherries, making a more dense pie.
