Bombay Turkey Casserole

This is an easy microwave casserole seasoned with curry powder and ginger.
List of Ingredients
4 medium-size baking potatoes, scrubbed
3 tablespoons water2 medium-size carrots
1 medium-size onion
2/3 cup water
1/4 cup Zante currants
2 chicken bouillon cubes, crumbled
1-1/2 teaspoons curry powder
1/2 teaspoon ground ginger
1 small yellow summer squash
1 pound ground turkey, crumbled
1 tablespoon all-purpose flour
3/4 cup nonfat sour cream
Recipe
. Slice the potatoes 1/2 inch thick and put them into a 3-quart microwave-safe casserole with the water. Cover with vented plastic wrap. Microwave on High for 12 to 14 minutes, stirring once, until tender; drain. Transfer to a plate and cover with foil.
2. Meanwhile, chop the carrots and onion and put into the casserole with the water, currants, bouillon, curry, and ginger. Cover and microwave on High for 4 to 6 minutes, stirring once, until crisp-tender.
3. Meanwhile, dice the squash. Add with the turkey to the casserole. Cover and microwave on Medium for 15 to 18 minutes, stirring 3 times, until turkey is no longer pink.
4. In a small bowl, whisk the flour into the sour cream until well blended. Stir into the casserole. Microwave on Medium for 1 to 2 minutes longer, or until heated through. Serve right away with the potatoes.
Serves 4.
