Broccoli Soldier and Potato Bake

1 pound broccoli crowns
3 large potatoes, peeled and diced
4 tablespoons butter, divided
¼ to Ï cup milk
4 ounces cream cheese, softened
Salt to taste
Pepper to taste
4 ounces chopped ham
2 eggs
1 cup sharp Cheddar cheese, shredded
¼ cup Parmesan cheese
Recipe
Preheat the oven to 325 degrees. Grease an 11-by-7-inch baking dish.
Clean the broccoli so that the stalks are a similar length and thickness. Steam in ½ cup water until fork-tender and bright green, about 8 minutes. Drain, then run under cold water to stop the cooking process.
Boil the potatoes until they are tender. Drain, then mash with 2 tablespoons of the butter, plus the milk, cream cheese, salt and pepper. Add the ham.
Beat the eggs, then combine them with the cooled potato mixture. Spread the egg and potato mixture into the prepared baking dish. Sprinkle the cheeses on top. Then arrange the broccoli upright in the mixture so that the stalks are standing like soldiers, side by side. Drizzle with the remaining butter.
Cover the dish securely with aluminum foil. Bake for 40 minutes, or until the egg-potato mixture is set.
Serves 4-6.
