Mornay Sauce
1 quart Milk
1 small onion, diced
1 tablespoon olive oil
4 ounces butter (1 half stick)
2 thirds cup flour
1 eighth teaspoon nutmeg
1 half cup Swiss cheese, shredded
1 quarter cup Parmesan cheese, shredded
1 whole chicken, cooked, coarse chop
2 pounds broccoli flowerets
2 cups croutons or course breadcrumbs
1 half stick butter, cut into pieces
Recipe
In a saucepan over medium heat add olive oil, add onion and sauté, do not let brown. Add butter and flour and cook for about 5 minutes. While whisking add milk slowly, cook until thickened, about 15-20 minutes. Add nutmeg and cheeses, whisk continuously until cheese is melted, remove from heat. In a casserole add some sauce, then begin layering chicken and broccoli alternately until all is used. Pour sauce over chicken, top with croutons or breadcrumbs and dot with butter. Bake in preheated oven at 350F for 20-30 minutes.
