1 tablespoon vegetable oil
1 tablespoon butter or margarine
1 lb. boneless skinless chicken breasts, cut into cubes
1/2 cup finely chopped onion
1/2 cup finely chopped green pepper
1 can condensed cream of mushroom soup, undiluted
1 cup water
3/4 cup uncooked long grain rice
1/2 tsp. salt
1/2 tsp. chili powder
1/4 tsp. pepper
1/4 tsp. paprika
Recipe
In a large skillet, heat oil and butter. Add chicken, onion and pepper; cook and stir until chicken is lightly browned and vegetables are tender. Stir in the remaining ingredients. Transfer to a lightly greased 1-1/2 qt. baking dish. Cover and bake at 375� for 55-60 minutes or until the rice is tender.
Makes 4 servings.
