Pierogi Casserole

List of Ingredients
1 pound lasagna noodles
10-12 potatoes
3/4 cup grated Cheddar cheese
salt and pepper to taste
1 stick of butter, plus more for buttering the baking dish
1/2 tablespoon chopped fresh basil
1/2 tablespoon chopped fresh thyme
2 onions, finely chopped
Recipe
Cook the noodles according to package directions.
Boil the potatoes until they can be easily pierced with a fork. Mash the potatoes, add the cheese, salt and pepper to taste and beat with a mixer. Melt the butter in a pan, add the onions, and saute until they are soft. Season the onions with salt and pepper to taste.
Generously butter a 9 x 13-inch baking dish. Place a layer of noodles in the dish, then a layer of the potato mixture. Repeat, ending with the noodles. Pour the butter and onions over all. Cover with foil and bake until heated through, about 20 to 30 minutes.
