List of Ingredients
For the salmon:
4 salmon filets
Cajun seasoning
Lemon-pepper seasoning
Salt to taste
1 cup white vinegar
For the salad:
2 heads romaine lettuce, chopped
2 radishes, chopped
3 carrots, chopped
1 (or more) hard-boiled eggs, chopped
½ cup salad dressing of choiceRecipe
Wash salmon, leaving skin on. Poke holes in each filet with a fork several times to allow marinade to seep into fish. Season each filet with Cajun and lemon-pepper seasoning, then salt. Pour vinegar over salmon and place in refrigerator for one hour to marinate. Leave some marinade aside for basting.
Remove salmon from marinade, place on a grill, skin side down and cook for 5 minutes. Flip and baste occasionally, cooking for an additional 5 minutes or until fish reaches desired doneness.
Prepare the salad by blending lettuce, radishes, carrots and egg in a bowl. Chop up salmon and place salmon on top of salad. Top with salad dressing.
Serves 4.
