List of Ingredients
# 1 Package of chicken thighs (with the bone)
# 2 Medium onions
# 6 Cloves of garlic
# 1 Can of chicken broth
# 10 Anaheim green chilies
# 2 Tablespoons of butter or olive oil
# 1 package of tortillas or taco shellsRecipe
Pre-heat oven to 350 degrees. Bake chilies until scorched all over. (Requires turning periodically, about 20 minutes.) Sauté’ onions in butter or olive oil until slightly browned. Add sliced garlic cloves and rinsed chicken thighs (skin removed.) Continue cooking on low allowing its juices to accumulate flavor. Add broth and season with salt and pepper to taste. Cook on low heat until meat separates from the bones.
Helpful Hints:
Garnish with diced tomatoes, onions, shredded lettuce, cilantro, sliced avocados, grated cheese, taco sauce, sour cream, jalapenos, Serrano chilies or even pinto beans. Can be eaten as a taco or burrito.
