    Dr. Phil's No-Fry Chicken Fried Steak

    4 top round or sirloin tip steaks{about 5 oz. each}
    1 tsp. meat tenderizer
    1 cup low fat buttermilk
    Nonstick Spray
    1 cup oat flour{or 1 cup UNcooked old-fashioned rolled oats finely ground in a food processor or blender. NOT quick cooking oats}
    2 tsp. sweet paprika
    1 tsp. onion powder
    1 tsp. salt
    1/2 tsp. garlic powder
    1/4 tsp freshly ground black pepper
    1/8 tsp cayenne pepper, optional

    1.Place the steaks between 2 large sheets of wax paper. Using a meat mallet or the botoom of a large heavy sausepan, pound the steaks to a 1/4" thickness. Remove the top sheet of wax paper, prick the meat with a fork at 1/2" intervals; season evenly with the meat tenderizer. Peel the steaks off the bottom sheet pf wax paper and place in a large shallow roasting pan{they can overlap}. Pour the buttermilk over the steaks & let marinate at room temperature for 30 minutes.

    2. Position the oven rack to the bottom 1/3 of the oven & preheat to 400 degrees F.
    Spray a large shallow pan or large rimmed baking sheet with non stick cooking spray.
    On a large plate combine the oat flour or ground oats with the paprika, onion & garlic powders, salt, pepper & cayenne, mix well.

    3. Dredge the buttermilk coated steaks in the oat flour mixture, then place in the prepared baking pan. Spray lightly with non-stick spray. Bake until firm but tender when pierced with a fork and lightly browned, about 30 minutes.

    Serves 4.
