Easy & Spicy Turkey Enchilada Casserole

List of Ingredients
1 tablespoon vegetable oil
1 large onion, finely chopped
3 cups cooked ground or shredded turkey
1 (7 or 8 ounces) can diced jalapeno peppers
1 package of enchilada or taco seasoning mix
10 corn tortillas
1 (15 ounces) can dark kidney beans
12 ounces shredded sharp cheddar cheese
1 (16 ounces) jarred salsa
Recipe
Preheat oven to 350 degrees. Grease a 13x9x2-inch baking dish. Heat the oil in a large skillet and cook onion until tender. Remove from heat. Stir in the turkey, peppers and seasoning mix. Place half of tortillas in the baking dish and top with turkey mixture, beans and 6 ounces of the cheese. Top with remaining tortillas. Cover with salsa and remaining cheese. Bake for about 30 minutes until the cheese is melted. Serves 4-6.
