Recipe Introduction
Pancakes from scratch are so easy to make there is no need to buy a
packaged mix. You can substitute other fruits, like fresh blueberries
or sliced bananas. I make pancakes every weekend so I bought an
electric griddle. It allows me to make all the pancakes at once so they
can be served hot. The secret to great pancakes is not to over-mix.
And of course, serve them with real maple syrup or try sprinkling with
some cinnamon-sugar.
List of Ingredients
1 1/4 cups all purpose flour
1 tsp. baking powder
1/2 tsp. baking soda
dash of salt
1 1/2 cups buttermilk
1 egg
2 Tbsp. Canola or vegetable oil
1 large Granny Smith apple, peeled & finely chopped
Recipe
• Preheat non-stick griddle to high or pan to medium-high.
• Sift dry ingredients into bowl.
• Combine buttermilk, egg and oil in a measuring cup.
• Make a well in flour mixture and gently fold in liquids. Do not beat.
• Gently fold in chopped apple. Batter will be thick.
• Cook on hot, ungreased non-stick surface, turning once.
• Makes 6 to 8 big fat pancakes. Around this house that serves two.
