John Kerry's Dark Chocolate Chunk Cookie

1/2 pound (2 sticks) unsalted butter, at room temperature
1/2 cup granulated white sugar
1 cup firmly packed dark brown sugar
1 teaspoon vanilla extract
2 tablespoons honey (it's what makes these so good)
2 large eggs
2 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
13/4 cups dark chocolate chunks (about 7 ounces)Recipe
1.Whip the butter until light and fluffy. (It should stick to the sides of the bowl.) Add the white and brown sugars and mix until well-blended, scraping down the sides of the bowl.
2. Add the vanilla; mix well. Blend in the honey. Add the eggs, one at a time, mixing well after each addition.
3.Add the flour, baking soda and salt. Mix, scraping down the sides of the bowl, until blended. Fold in the chocolate chunks. Refrigerate the batter for 30 minutes.
4. Slide one of the oven racks onto the middle shelf. Preheat the oven to 375 degrees.
5.Spoon batter by heaping tablespoonfuls, about 2 inches apart, onto parchment-lined baking sheets. Bake until set and lightly browned around the edges, about 10 minutes. (Do not overbake.)
6.Remove from the oven. Let cookies cool on the baking sheet for 10 minutes before removing them to a rack to cool completely.
